Paul Breslin (a Rutgers University nutritional scientist), David Foster (a Hunter College biologist) and Onica L. LeGendre (a Hunter College chemist) discovered that oleocanthal can cause cancer cells to become immune to their own enzymes.

Oleocanthal, a chemical in Extra Virgin Olive Oil(EVOO), can be described as a chemical known as 'aloe Vera Aldehyde. Oleocanthal can also be made from olive pulp when it is crushed.
