Olive oil should not taste like butter. However, some people believe that olive oil tastes more buttery than oily. This is wrong. Olive Oil should have some bitterness. Fresh olive oil should taste "green" fresh, but a little less, and it shouldn't taste bland or taste like "old nuts".
