It has been known for a long time that it was made in Modena and Reggio Emilia during the middle Ages.
Only a few modern chefs and foodies truly appreciate Balsamic Vinegar. Modena's Balsamic Vinegar of Modena can be found in many markets worldwide and is quite affordable. It is also used in salad dressings and in restaurants.
Different Types Of Balsamic Vinegar
Let's now look at the Balsamic Vinegar available on today's market. Balsamic Vinegar is broadly classified into three types:

Aceto Balsamico Tradizionale
Reggio Emilia & Modena are the only two companies that produce true Balsamic Vinegar. True Balsamic Vinegar can only be made from Lambrusco or Trebbiano grapes.
The syrup is aged in small barrels for just over 12 years. These casks can also be used to make different woods like mulberry, chestnut, oak, and chestnut.
True Balsamic Vinegar is rich in color, and dark brown in color. It also has complex flavors. Reggio Emilia's color can indicate the age of balsamic vinegar.
A red label indicates that the vinegar is at most 12 years old. A silver label indicates that the vinegar's age is 18 years. A gold label signifies that the vinegar has been around 25 years.
Condimento Grade Balsamic Vinegar
Balsamic Vinegar can be called salsa balsamica, condimento balsamico or even balsamico. You can also make condimento Balsamic Vinegar in a variety of ways.
Alternative methods to make Balsamic Vinegar include the same process as traditionale Balsamic Vinegar, but are from producers outside Reggio Emilia or Modena.
You can also make it by adding grape juice and regular Balsamic Vinegar. There isn't a standard way to measure this type vinegar, and the packaging doesn't tell you how good it is.
Modena Balsamic Vinegar
These products are commercial grade and are very similar to the original product. They are also made from wine vinegar and contain coloring, corn flour, caramel, and other ingredients to mimic the thickness of the Aceto Balsamico Tradizionale de Modena.
